My Favorite Toaster Oven Recipe

It's been almost 4 years since I bought my first home. I had just graduated college and landed a full time job the day after graduation. I thought I had it all figured out, but it didn't take long to realize I was so wrong.

I'm an only child that lived at home until I was 24. My parents took care of basically everything. Yes, I worked. And yes, I paid for quite a few things for myself. But I think the main thing I underestimated was that I lived in a magical house filled with everything I needed. Light bulbs, batteries, toilet paper, shampoo that magically refilled itself when it was close to empty. And a fridge that was stocked full of anything you could possible be hungry for. My parents are not rich by any means, but they have always taken care of me.

So, I now have a house of my own. and the first year was a huge wakeup call. What am I saying.. I'm still experiencing that wake up call. But I have almost figured out how to manage my time, money, and social life. Plus, I have had the chance to realize that buying the toilet paper in bulk is way easier than 4 rolls at a time. 

Now, flash back to my first year as a single lady in a new home on my own! 
Whats for dinner? You have practically nothing in the fridge, pennies in the bank, and you were dumb enough to throw out your 60's style oven (because you thought the home renovation process was way simpler than it turned out to be). All you have now is a toaster oven, and a stove top. So heres what was thought up with the little bit of food I had. I now find myself making this treat all the time. Enjoy!

Zucchini Pizza Muffins


  • two tomatoes
  • two decent sized zucchini  
  • one 16 oz package of shredded pizza cheese
  • one can of pizza dough
  • spices: table blend or oregano and basil

optional (but highly recommended)

  • a couple of tablespoons of country honey mustard (grey poupon) 

Start by slicing up your zucchini into little cubes. I use a peeler to get some of the skin off first. But, there is no formula to how I cut them, I just get it done! 

Then throw them into a skillet with a little olive oil on medium heat.  I add my herbs on top and stir it around. This part gets the kitchen smelling good like I'm doing some serious gourmet cooking.

Now you pop the dough can and unroll it as big as you can get it. Cut the dough into six square pieces. then push each piece into a cup of your large muffin pan. I do this with a spoon. Then I smear grey poupon into the bottom of each cup. Place the muffin pan into the toaster oven for about 6-7 minutes at 350 degrees. This is just to get the dough baking a little so it won't be super soft when all the fillings are inside

While you are waiting on the dough keep stirring the zucchini and add in your diced tomatoes. Stir it a little more.

Pull out your muffin pan from the oven. If all the dough is swollen up just use a spoon and push it back into shape.  

Put a pinch of shredded cheese in the bottom of each dough cup and then scoop a few spoonfuls of your zucchini tomato mixture on top. Cover the tops with cheese and sprinkle some more spice on top of that.  

Place back in the toaster oven for another 10 minutes or however long it takes to get the desired crust you like. Remove from oven and let cool for about 10 minutes.  

Remove a zucchini muffin and eat up! 


So there it is... deliciousness! I refrigerate the remaining ones and pop them in the microwave for a minute throughout the rest of the week.
